Caye Caulker, a little island off the coast of Belize, is one of my favorite places on Earth. I was lucky enough to spend a week there back in 2006. Tina’s Hostel is my recommendation. So beautiful. Go fishing. Swim. Drink the neon-bright cocktails near “the split” (in the island). And jam out to some reggae. Here’s a link to my unfinished Belize travelogue I posted about that time.
This yellowtail snapper made a fine dinner later that night

In Mexico, not that far away from Belize we have Cancun and Xcaret an ecological park
With three different rivers, inlet and gardens, and a natural zoo of sorts, it is easy to get lost in Xcaret.
check it
